Kansas Potato Salad

2lb new red potatoes
5 lg eggs
1/2 cup diced onion
1/2 cup diced celery
1/2 cup sweet gherkin pickles, diced
1 cup mayonnaise
2 Tbsp. cider vinegar
1 Tbsp. prepared mustard
1 tsp. salt
1/2 tsp. paprika
1/4 cup sweet gherkin juice

1. boil potatoes until tender.
2. drain water and refrigerate potatoes for a couple of hours until cold
3. dice potatoes and combine with the rest of the ingedients
